Easy BBQ Pork Belly with Porktopia

WHAT YOU NEED

Ingredients

  • 1–1.5 kg pork belly
  • Porktopia BBQ rub, enough to coat generously
  • 1 tbsp neutral oil or yellow mustard as a binder
  • Apple juice or water for a light spritz
  • Your favourite BBQ sauce, optional

Method

    Pat the pork belly dry. Lightly coat the meat with oil or mustard, then cover generously with Porktopia on all sides.

    Heat your BBQ or smoker for indirect cooking at about 135–150°C. Place the pork belly away from direct flame.

  3. 3

    Cook until the outside has developed a deep, tasty bark, spritzing lightly if the surface begins to dry.

    Continue cooking until the pork is tender. Cooking time varies with thickness, so use tenderness rather than the clock as your final guide.

    Rest for 10–15 minutes before slicing. Brush with BBQ sauce near the end if you want a sticky finish.
